Squashed fly blondies

225g butter
400g sugar (half granulated, half soft brown)
225g self raising flour
4 eggs
2tsp Butterscotch or vanilla flavouring.
Raisins

Melt butter and sugar.

Whisk in eggs and flavouring.

Fold in flour and raisins.

Pour into greased pan and bake at gas 5 until golden brown on top.

The best chocolate brownie pudding

1 cup butter
4 eggs
2 cups sugar
1 cup cocoa
1/2 cup flour
1 tsp vanilla

Whisk eggs and sugar. Whisk in butter and vanilla. Whisk in flour and cocoa. Pour into greased tin/casserole dish. Bake at gas 4 for an hour. It will still be a bit squishy in the middle. Enjoy for pudding then chill the leftovers overnight and cut into brownies.

turns out that cake i made was really, really good, which is unusual for me and sponge, so here is the recipe and repetition of the picture:
Christmas Chocolate Spice Cake (Christmas cake alternative)
Sponge: Melt 100g dark chocolate with 175g margarine. Add to all this in a bowl and whisk together: 75g sugar; 3 eggs; 150g self raising flour; 1 tsp baking power; pinch salt; 1 tsp vanilla; 2 tsp cinnamon; 1tsp ginger; 1/2 tsp nutmeg (spices not all necessary, as long as you have at least one).Pour into greased baking tray of appropriate depth (sponge will rise to about double in height) and bake at gas mark 5 until springy to touch in middle. Cool lying upside down on a cooling rack to flatten the top a bit.
Decoration: When cooking make up small amounts of green and red icing from pre-made cake icing. Make the red bits into small balls (holly berries) and roll the green then cut out holly leaf shapes (i have a cutter this shape)
Fudge: Make the fudge by melting a bag of toffees with 200ml evaporated milk and 2tsp cinnamon until sticky and spread on the top of the cake. 
Icing: Roll out the white icing and cover the cake, carefully trimming it to stop on the edges of the top. 
Presentation: Cut the icing only into slices (see picture) and decorate with holly leaves and berries, using a touch of water on the white icing to stick them down.

May have made marshmallow and white chocolate chip brownies (Taken with picplz.)

melt 7oz sugar & 4oz butter & 2oz chocolate. beat 2 eggs and 1tsp vanilla and add to melted ingredients (off the heat). fold in 4oz self raising flour. add any extras (marshmallow or chocolate bits etc). bake at gas5 in greased pan until outside is well cooked and inside still a little squishy. cool in fridge before cutting.

here is a recipe i just made for pesto because while i really, really like pesto, my dear old husband is allergic to nuts. i’ve only ever found one pesto in shops which doesn’t has nuts in it, which is found in aldi, however it is more of a sunblush tomato based one. don’t get me wrong it’s really good however, it’s not basil pesto. so i decided to make some sensible replacements for this alternative and importantly nut free pesto. feta cheese replaces parmesan and roasted soya beans replace the nuts!

day 9 festive fudge. no making of it today but i did make it not too long ago. cant make it today because we are preparing for our jaunt to england for bowlie 2. just packed the cats off with their gran and now going to have a bath. but first…
recipe line tin with clingfilm. fill your sink with cold water. add the following to a saucepan: 500g sugar; 150ml milk; 150g butter; 150g plain chocolate; 50g honey and melt on a medium heat. then boil it and test by dropping a blob into cold water. if it forms a soft ball it is thick enough. put the bottom of the pan in the sink of cold water til its cooler then stand the pot for 5 minutes. do not stir. next add 2 tsp cinnamon and 2 tsp ginger then beat it for 10 minutes until it is very thick. pour into the tin and dust with cinnamon, ginger and icing sugar on top. put in fridge, cut when totally cold.
display you can do a few things to display it. cut it into small squares and put in small paper cases. to make them to hang on your tree cut a square of card and stick it in the middle of a larger bit of cellophane. put a bit of fudge on the square and cup it in your hand then pull the cellophane together. tie a ribbon loop for hanging first then a length of ribbon for curling. curl with scissors. add a sticker and put on your tree. you can also make 2 origami boxes from decorative card, one a little smaller than the other and sit the fudge in it on tissue paper then wrap the upper box like a present.

Winter Burgers

Burgers are usually saved for the barbecue, and for warm weather. I always thought this to be a bit odd seeing as burgers are hot meat - and all other hot meats are eaten in winter months too. Seeing as I don’t think burgers should only be eaten in winter as takeaway after a night out, and seeing as we got a mincer for the wedding, I have made a special recipe to put this right. Winter Burgers

So simple. First get 200g of mince for every person who is having a burger (i.e. 2 people/ 2 burgers = 400g mince). From here on in the measurements will be for 2 people/2 burgers/ 400g mince, so multiply people! Second get the following herbs and spices together: cayenne pepper (1/4tsp) cloves (1/4 tsp or 4 cloves) black pepper (1tsp) salt (1/4 tsp) juniper berries (1/4 tsp or 4 berries) cinnamon (1 tsp) mixed spice (2 tsp) ground mint leaves (3 tsp). If you cant get them all don’t worry, just use what you can get. Third combine these herbs and spices and crush the whole items (cloves, juniper berries) with a mortar and pestle, in a small chopper, or any other way you can) and add to the mince. Fourth add a little olive oil to the mince and using your hand mould the mince into even sized balls, then flatten and place them on a pan. Fifth cook the burgers in the oven, grill, or on the stove as you prefer, to your taste, then serve.

Also you can do the following to make the other burger bits more wintery. Use seeded or wholemeal/wholegrain buns or even cinnamon buns/bagels. Use watercress, rocket and some fresh mint leaves in place of lettuce. In place of mustard, use honey mustard. Add some mixed spice to your ketchup before using. Select a festive cheese to use, e.g. wensleydale and cranberries.
